Castle for chocolates

After attending baking class, I asked hubz if he wanted to go straight ahead to see Chocolate lover and without hesitation he drove the car and few minutes my heart was filled with joy upon seeing this chocolate looking castle.

When we were inside, I got the feeling I wanted to buy everything hahaha.

Anyway, just bought few baking pans and some of my baking needs. Ahhh....A place of solace for me. :)

Sweet and sour pork

  1. Sorry if I made you hungry hehehe!!!!!

    You'll need:

    half kilo slice Pork loin
    slightly beaten egg (I used 2)
    Flour
    Ground pepper
    Salt
    oil for frying

    For the sauce:

    Pineapple tidbits, reserved the syrup
    Tomato sauce
    brown sugar
    carrots
    onions quartered
    bell pepper
    water (about a cup)
    cornstarch dissolve in water

    How to:

    Sprinkle the flour with a little salt and pepper and mix well. Dredge the pork pieces in seasoned flour, then dip it in egg and fry, making both side brown. Remove from the pan and place on a plate with tissue to absorb excess oil.

    Now to make the sauce:

    Stir fry the onions, add the pineapple syrup. Stir in the brown sugar (if you find the syrup sweet, the sugar is optional). Then add the tomato sauce and water. I don't usually measure so to make it safe, put things in small amout then from there, add more depending on you taste. Simmer for a minute. Add the carrots and the pineapple tidbits (you can add bamboo shoots and green onions if you want). Let it simmer again. If it's bubbling add the cornstarch mixture to thicken the sauce. Then throw the pork pieces. Mix and serve. :)

    Easy peasy. It just like throwing everything there. lolz

    Hubby as usual loved it. He though it was chicken...hahaha!

Let's eat

My all time favorite breakfast.

I always make my own beef tapa. You see, the one sold at the supermarket are too salty or too much of the fat. I had tried eating it at restaurant but it's too oily. So to fix all this up, I just made my own. :)

So for today's breakfast, we had beef tapa (love it with lots of garlic), poached egg, garlic rice and a cup of steaming coffee. The best Filipino breakfast ever...yumm!

I got an email from Grace asking me how's the little boy doing now? Thank you dear for the concern and prayers. It always works :)
Now, just if you too are wondering...
The little boy is okay. According to the biopsy  the mass not harmful but he has to undergo radiation to make sure that it wont reoccur. The radiation therapy is scheduled this 3rd week of the month for five consecutive days.
Its a solace for the whole clan that everything are okay now. For all those who helped in prayers...thank you very much :)

After the operation, he is now rocking!!!!

A new Hobby

Last Saturday, I found a bead shop store at SM, I was amazed with the accessories they are selling. Thus making me want to make my own. I love accessories. I usually buy mine, the last time I made my own was way back in college. I also have a friend who makes hemp bracelet for me. So you could just imagine what kind of accessories I usually wear :)

Anyway, I bought few beads and a string (sorry dont know what it's called), armed with little knowledge in accessory making that I learned from my friend, I went home eagerly.

After trying out doing knots and so, my bracelet looks like this...

What do you know, I enjoyed making it. Next week, I'll hoard more stuffs! lolz

College favorite

Do you have a favorite song you shared with friends in school?

Well I do have. This one song I really love from the 90's. It's so hip. Whenever I hear this song, it reminds me of my college days, my college friends (mostly living outside the country). We love singing this before. A college friend who was a lead vocalist sang this in a party we had in the university. Gee I am missing them! :(

Oatmeal Cookies

Aside from my husband, my father love my baked goodies particularly the cookies that I prepared the other week though he fancied a less sweet treat. So I decided to make a healthier snack. This week I baked oatmeal cookies.

The original recipe calls for a cup of sugar, I only used 1/2 cup and add 1/4 cup of maple syrup. The result was just fantastic.

Here's the recipe just in case you want to try it;

You will need:

1 cup flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 tablespoons unsalted butter

1/2 cup brown sugar

1 large egg

1/4 cup maple syrup

1 teaspoon vanilla extract

1 1/2 cups rolled oats (not instant)

1/2 cup raisins (optional)

then

1. Preheat the oven to 350 degrees

2. In a small bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a large mixing bowl, beat the butter sugar until creamy. Add the vanilla, egg and maple syrup. Mix well

4. Stir in the dry ingredients, then the oats and raisins.

5. Drop the batter by rounded teaspoon or with a cookie scoop.

6. Bake the cookies for 10 to 12 minutes. Cookies won't look ready at 10 minutes but take out and let sit for 5 minutes in order to be chewy.

Storage: Once cool, store the cookies in an airtight container at room temperature.

I tasted the dough. It was really yummy. How could I resist it!

Scoop them like ice cream..yeah baby!!!

When I am baking I make sure that oven heats up to its asked temperature, so there, the oven thermometer comes in very handy!

After 12 Minutes, here are the yummy oatmeal cookies. It was chewy and not that sweet.
