Eggplant and Tofu in Spicy Oyster sauce

I found this meatless recipe on a magazine. The first time I tried this recipe, it became my favorite. This is also my favorite packed lunch for work and my officemates loves it too.
Now let me share this 10 minute recipe. If you love tofu, I am so sure you will like this recipe too. :-)

You will need;

4 pcs eggplant cut 1" long then cut in half
300 grams firm tofu cut in cubes(I used masoya Japanese firm tofu)
half cup oyster sauce
1 tbs sugar
liquid seasoning
1/2 cup water
Chopped chillies (I used 2)
oil for frying (I used olive oil)

Then what you will do;
  • Fry the eggplant then place in a paper towel to remove excess oil and set aside.
  • On the same pan, place the oyster sauce, liquid seasoning, sugar and water. Simmer for a minute.
  • Throw in the cubed tofu. Simmer until the tofu until it'll soak up the flavors. If you think, the sauce is running dry, do add more so as not to burn the sauce.
  • Keep simmering until the sauce thickens. Add the fried eggplants. Mix and turn of heat.
Serve hot.

Fish Fillet and Tofu in Oyster Sauce

As I've said in my previous post, I love eating tofu. I love including it in my salad, in some pork or beef dishes and vegtables. For last night's dinner, we had fish fillet and tofu in oyster sauce.

To prepare this, just marinate 250 grams of fish fillet ( I used cream dory) in calamansi juice (4 pcs)with salt and pepper for an hour

When the fish fillet are ready, prepare the batter. But first heat oil in a frying pan. Then mix 1 tbsp of flour, add 1 beaten egg, Season with salt and pepper. Cover the fish with the batter and fry the fish, making sure both side are brown. After cooking the fish fillet, set it aside then fry the cubed tofu on the same pan, then set it aside.

Now will make the sauce...
Saute onions, garlic then ginger. Thrown in the julienne carrots. Stir fry for a minute then add a cup of water. Simmer for a while then drizzle oyster sauce depending on your taste. Thicken sauce with cornstarch dissolved in water. You may season it with salt and pepper if you want.

To serve,
place steaming rice in a bowl, then top the rice with fried tofu and fish fillet. Spoon the thicken sauce over. Drizzle oyster sauce and sesame oil and then serve hot. Yummy!

Humba

Humba Recipe (Braised Pork Belly) is one of the easiest dish I know and one of my favorite comfort foods.

TO make it, you'll just need:

1 lb. pork pork belly cut into serving pieces
1 cup water
garlic, crushed
1/3 cup vinegar
1/4 cup packed brown sugar
1/4 cup soy sauce
1 bay leaf
1 tsp. peppercorns
1tsp. oil
salt to taste
1 heaping tablespoon salted black beans

In a medium pot, saute garlic in oil until brown. Add pork and cook until brown. Combine water, soy sauce, vinegar, brown sugar, salt, bay leaf and black beans and add to pork. Cook over low heat until pork is tender. Serve hot.

Easy right?

If you wanted it to be a healthy meal, why not add tofu like what I did. :)

Tofu and Pork (Tokwa't Baboy)

Tokwa't Baboy
Whenever I visit my kapampangan officemate slash kumare at San Fernando, she would always prepare this dish. She knew how I love tofu (tokwa) . This dish is a bit different from the usual tokwa't baboy because it uses calamasi juice instead of vinegar.
My husband love it too. So this evening he requested it for dinner.
Now let me share how to prepare this very simple dish.

You'll need:
400 g. pork (kasim) fried and cut into bite size pieces
1 big tofu, fried, toast it and cut into pieces
2 onion chopped
half cup soysauce
calamasi juice (from 10 calamasi pieces)
chili pepper

Combine the soysauce, calamsi juice, chopped onions and chili pepper. I add more chili pepper since I want it spicy. :)
In a large bowl, toss together the pork and tokwa cubes. Pour in the soysauce mixture over the pork and tokwa.
Serve and enjoy!
