Buko Pie

Delectabel Buko Pie.
This one comes from Colette's Batangas branch. Actually, I find Colette's a bit cloying, too sweet for my taste buds.
Now I've heard the ones from Lety's Buko Pie and The Original Buko pie (Laguna) are yummier. Never tried both but next time we visit Laguna, we'll try buy those. :)

Tuna Sashimi

I eat tuna sashimi although not really a big fan but whenever hubz will have this, I would eat a slice or two. It's his favorite, a scrumptious treat for him. So when we were at the supermarket the other day, he bought some. Dinner came and he eagerly devour the raw fish. To him the tuna sashimi tasted sweet. Funny, I cannot seem to experience that sweetness he was saying whenever I would eat sashimi. hahahaha!

I did not eat the sashimi that night by the way but there are few more slices left inside the fridge. Maybe I might join him next time. :)

Fresh salad

Some grapes, sliced cucumbers, corn kernels, lettuce and slightly browned tofu, toss them all together. Drizzle some honey and mustard dressing, then you'll get this light yummy salad. :)

I am gaining weight so this would be my diet for a while (for day, I guess....lolz) Happy eating everyone!

Skinless Longanisa

I posted in my other blog that I love eating longanisa. The only thing that bothers me is the amount of salt it contains plus the preservative it has. So the fix.....
Tada!!!! I made my own skinless Longanisa. It's easy you just have to mix everything lang!!! :)

To do this you need:

Half Kilo Pork
1/4 cup brown sugar
3tbsp crushed garlic
3tbsp of vinegar
5 tbsp worstershire sauce
1 beaten egg
salt and pepper

Then.....

Just mix everything in a bowl (I used my hands). Then get a small amount of the mixture, fry it to know if it need adjusting in it's taste. I want a garlicky, peppery and a little sour longanisa so I add more garlic, pepper and vinegar. Then when everything is mix form into log and refrigirate.

Fry in a little hot oil.

Serve with fried rice and sunny side-up egg. Dont forget the vinegar with garlic. Hmmm!!!

Refreshing snack

Lately I baked brownies and cheesecakes for friends and relatives. I really dont eat what I bake, maybe because I'm nauumay so I let friends and relatives enjoy what I prepared.

What I feast on usually are fruits like this mixed canned fruits. It's so good that I can finish a medium can in one sitting. :)

Don't you find it refreshing! :)

More Smores!

Did you know that the first ever smore recipe can be found in the (US) Girl Scouts handbook of 1927. The traditional smore is made with marshmallows, graham crackers and a few pieces of chocolate. Now many had made varieties for this snack recipe. S'more by the way is a contraction of the phrase, "some more" :)

I taught my niece how to make s'more last night. :)

To make this you'll need:

graham crackers
Chocolate Bar
large marshmallows

Break graham crackers in half. Break chocolate bar in half; center one section on each of 2 graham cracker halves. Top each with marshmallow. Place on paper towel. Microwave in 10 second intervals until marshmallow puffs. Top each with another graham cracker half; press gently. Let stand 1 minute to soften chocolate. Serve immediately. :)

Something fish-y

Daing the bangus from Pangasinan. It might not look that good in that photo (I fried it without oil on our non stcik pan)but I swear it really taste good. The timpla was perfect,that's why were a suki of hubz officemate who sells this. We buy 2-3 packs weekly. :)

I am addicted



Last night I got these and now I not only bought 1 but a dozen. I'll give the half dozen to my niece while the other half is mine (okay hubz you can get two from my share).....Therefore I got 4....Uoh sugar overload but who cares, these are my favorites. I could always use my navigator to elimate it. But for now, I would just enjoy everything. Harhar.


And look what they have to spread christmas cheers.

Sunday Lunch-FIsh Fillet and Potato Salad

I cooked sweet and sour fish fillet for today's lunch. My sister-in-law and his husband were here for lunch so this practical dish made our lunch satisying. :)

So to do this, you'll need:

1 kilo fish fillet (any white meat fish will do)
A cup of pineapple chunk (set aside the syrup)
1/4 cup brown sugar
1/4 cup vinegar
1-2 tbsp tomato sauce
cornstarch dissolve in water
red bell pepper cut in strips
salt and pepper
After having the stuffs you need, you'll just
1. Cut the fish fillet in serving pieces. Sprinkle with salt and pepper. Your choice, you can fry or grill the fillet. I grilled mine. Place in a serving plate and set aside
2. In low heat, dissolve the sugar in pinepple. Pour the vinegar and let it simmer. Add the tomato sauce.
3. Add the dissolve cornstarch. Continuously mix it until it thickens. Add the pineapple and bell pepper. Simmer for a while.
4. Pour over the cooked fish fillet.

Serve and enjoy :).

Then I made potato salad.

You just need :
4 lbs baby potato (boiled & peeled)
cup of mayo
1 tbsp of mustard
4 hard boiled eggs chopped
1/4 cup Pickles-chopped
lettuce cut in small pieces
sugar
salt & pepper to taste
1. This is easy, just mix the mayo & mustard.
2. Add sugar, salt and pepper according to your taste .
3. Then throw in the lettuce and eggs.
4.When everything is mix, pour the dressing over the potato.
5. Sprinkle with chopped bacon or with chopped celery.
So that how it's easy to prepare.
Hubz says it taste good.

We had a wonderful lunch and a good conversation over a cup of coffee. Though I only ate the salad, I can't hardly chew, my braces are newly adjusted. They said the food taste great and got a thumbs up from hubz and the in-laws...yehey!!!! So how was your weekend

The Egg Story


How would you like your eggs?

I love mine scrambled with milk. Adding liquid to the eggs makes it less likely to turn out tough or rubbery. So every weekend, scrambled eggs is a must for breakfast.
What if your eggs are like this:

organic eggs

We went home with half dozen of Vitamin E Enriched and half dozen Selenium Enriched eggs. Bought them a bit pricey than the conventional produced eggs. The seller, gave leaflets about the health benefits of eating this kind. So maybe thats the reason why this eggs are a bit pricey :)

Anyway, one Saturday morning, I used 3 organic eggs for breakfast and noticed that the yolks are golden and pretty. The seller was right. But when it was cook, it has an odd taste that I didn't like at all. Guess, I'm not used with it's taste. So hubz just finish the whole serving. From there, I concluded (base on own opinion), the eggs won't be good for scramble purposes. Husband then suggested boiled eggs instead.

Few days from that I tried the boiling and yeah he was right,the odd taste was not that obvious, so that fine Sunday morning, he alone had organic boiled eggs for breakfast. :)

Hence, it's really hard to be a health buff...sigh!

Sidenotes: I tried organic pasta and sunflower mayo, it taste different and it's pricey too. It took me days to finish the cooked pasta and months before I emptied the mayo bottle.

Bibingka here

Uhhhh...heavenly!

I was craving for this. I want a real bibingka the one which uses galapong and not those made from flour. Ferino's bibingka satisfied my real thing bibingka craving. Not too oily which means not messy to eat, not too sweet just enought, it's soft topped with fesh grated coconut, perfect! I want this now please!

Craving!

So can you see the Tilapia? If not look closer lolz.

Craving for sweet and sour tilapia since yesterday. This weekend, I 'll try to cook this. Hubz likes eating fish dishes but sad to say, I only knew less than ten recipes. Because I do not eat fish that much. Hence, I only like tilapia, Milk fish, Mackarel scad (also know as galunggong), tuna, gindara to name a few. So you could just imagine how hubz misses eating paksiw or pinangat. But sometimes, I cook such dishes for him and open a can of sardines for me. So that settles. hahaha.

Oh well. I am just lucky that hubz doesn't complain about it. ;)

Seafood Kare Kare

Hubz love karekare so much but since I wanted a much healtier version, I opted to make seafood kare kare instead. This is a simple dish. you'll just need: 10 pcs mussel (tahong)
10 pcs clams
10 pcs prawns
half kilo sliced squid squid (calamari)
eggplant sliced
string bean
pechay
banana blossom about 1/4 cup
4 spoonful peanut butter
1-pack mama sita kare kare mix dissolve in 1 cup water
onions and garlic
shrimp paste

Then:

Steam the seafood about 8-10 minutes, dont overcook. set aside.
In a saucepan, saute the onions and garlic. Then add the eggplant, string beans saute for 5 minutes. add the pechay then the banana blossom. Set aside.

In a separate saucepan, saute another batch of garlic and onion, add the diluted kare kare mix (makes life easier :) ). Simmer for a minute add peanut butter, to make it more tastier. Lower the heat and occasionaly stir to avoid the sauce from burning. If the sauce thickens add the steam seafood and vegtable. Let it simmer for a minute. It's done. Easy right?

Serve with shrimp paste (I want my bagoong spicy)...yummy :)
