Red Velvet Cupcake

A visit to J.Ana's blog reminds me that I had a pending recipe entry for red velvet cupcake. I made it last May and I forget all about it.

If you want to try it, I listed down the recipe.

To make this you'll need;
1 1/2 cups sugar
2 eggs
2 oz red food coloring
2 tablespoons cocoa
1 teaspoon salt
2 1/4 cups sifted cake flour
1 cup buttermilk
1 teaspoon white vinegar
1 teaspoon vanilla
1 teaspoon baking soda

Then; Cream butter and sugar until fluffy. Add eggs one at a time and beat for 30 seconds. Add cocoa and red food coloring, beat slightly. Add sifted cake flour, salt, buttermilk, vanila and mix. Remove batter from mixer. In a small bowl dissolve baking powder in vinegar. Then pour over batter and manually stir. Dont over stir okay, or else the cake might get tough :) Scoop into cupcake pan 2/3s full and transfer to a 350 F oven. Bake for 20-25 minutes or until a toothpick inserted at the middle comes out clean Cool for a while then top with cream cheese frosting

For the cream cheese frosting:

1 (8 ounce) package cream cheese, softened
1/2 cup unsalted butter, softened
1 1/2 cups powdered sugar
1 teaspoon vanilla extract

Then

Beat the cream cheese, softened, cup unsalted butter, softened, powdered sugar, and 1teaspoon vanilla extract. Blend until smooth. Increase the speed to high and mix until very light and fluffy. Enjoy :)

Many Ways

French Toast anyone?

It's good with coffee or tea. A cup of chocolate or a glass of orange juice will make it heavenly. Top it with your favorite fruit and cream perfect.... or drizzle it with syrup....ah yummy!

Many ways indeed but for me the best would be eat it on it's own with hubby! Mushy lolz!!!!

If your appetite is saying....make me now, make me now, you'll just need to;

beat 1 egg mix with 3/4 cup milk, pinch of salt and drizzle with some cinnamon and a drop of vanilla

Then heat a lightly oiled skillet or griddle over medium heat.

Soak 2 slices of bread egg mixture for 20 second on each side, or until thoroughly coated. Cook bread until both sides are lightly browned and crisp.

Serve hot. :)

Filipino Breakfast Steak (beef tapa)

Here is another version of the beef tapa that I love doing. Less grease and yes it taste good. :)

You'll need;

    1/2 tbs ground pepper
    2 tbs Brown sugar
    1 t Garlic -- finely chopped (I used McCormic garlic powder)
    1 1/2 tb Salt
    2 lbs Breakfast steak (a thinly, this steak is sometimes called wafer steak, sandwich steak or minute steak )

Then;

Mix salt, sugar, garlic, and ground pepper. Pour the mixture over the meat and mix well. Store covered in the refrigerator overnight.

The next day.....

Bake at 350F for 45 minutes or until meat became brown. Serve with fried rice and egg. My ultimate breakfast!

Best with spicy vinegar....wooohhh!!!

What I like about this kind of tapa is, it's less greasy and not cloying plus if you'll bake it a bit longer, it became crunchy just what I wanted. :)

Little Something

Oh It's work again tomorrow. I have to start researching about the proxy that we needed for our new system at the office. it means, I'll be a little bit busy over the week but I'll make time to stretch up a bit to relax, everyone needed that right? :)

Chocolate chip cupcake

Ingridients:

1/2 cup butter

2 cups brown sugar

2 eggs

1/2 cup milk

1 cup water

50 grams unsweetened cocoa

2 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1/2 cup chocolate chips

For the graham biscuit crust

1 cups of crushed graham

4 tbsp of melted butter

1. Combine the crumbs, and melted butter.

2. Scoop a heaping teaspoon into each cupcake paper, pressing down to cover the bottom.

For the chocolate cupcake

1. Beat butter until creamy, add sugar. Mix well.

2.Then add the eggs one at a time. Add the milk, water and the cocoa and the chocolate chip. Mix everything until smooth.

3. In a separate bowl, sift flour, salt and baking soda. Mix the chocolate mixture into the batter.

4.Spoon batter over biscuit crust until just under 1/2 full.

5. Bake at 350 for 20 minutes until a cake tester comes out clean.

Comfort food

The other day, I was on a tv cartoon marathon with my ten year old niece. At around 3:00pm we felt hungry so I checked the fridge but there was nothing in there that interest my appetite. Then Kat (my niece) said she wanted to eat Lucky Me Pancit Canton.

Actually, it's been a long time that I haven't had instant pancit canton, for health reasons. But I must admit, I missed eating it.

So I asked Kat to buy 3 packs of instant pancit canton from the nearest grocery. After few minutes. We were enjoying this;

Pancit canton topped with poached egg. Ahhhh....It was good. :)

Tofu and Pork (Tokwa't Baboy)

Tokwa't Baboy
Whenever I visit my kapampangan officemate slash kumare at San Fernando, she would always prepare this dish. She knew how I love tofu (tokwa) . This dish is a bit different from the usual tokwa't baboy because it uses calamasi juice instead of vinegar.
My husband love it too. So this evening he requested it for dinner.
Now let me share how to prepare this very simple dish.

You'll need:
400 g. pork (kasim) fried and cut into bite size pieces
1 big tofu, fried, toast it and cut into pieces
2 onion chopped
half cup soysauce
calamasi juice (from 10 calamasi pieces)
chili pepper

Combine the soysauce, calamsi juice, chopped onions and chili pepper. I add more chili pepper since I want it spicy. :)
In a large bowl, toss together the pork and tokwa cubes. Pour in the soysauce mixture over the pork and tokwa.
Serve and enjoy!

9. I dont usually wear wake-up but I make sure my brows are regulary maintained through threading (ouch!!!!)

10. I love Hayden Christensen, he is cute!
