Adobo Flakes

And because I wanted to feed the husband with something new, I decided to make adobo flakes. We dont have left over adobo so I cooked it first before making the flakes. It's my first time and I must say that I maybe making this more often.

For this you'll need

1k pork kasim or chicken (I used pork)
1/4 cup vinegar (I used cane vinegar)
1/2 cup soysauce
lots of garlic crushed
bay leaf
freshly cracked black pepper

then in a pot, just throw everything wait until the meat gets tender. Do taste it to make sure that it's flavor is just enough.

Then when the meat is done, let it cool and shred it by hand.

Then get 1/4 cup of the adobo sauce (and the adobo oil too) and heat it in a pan and boil the meat flakes. Stir and wait until the sauce evaporates. Continue adding the sauce 4 times or so until the you get this crispy/chewy texture.

Perfect with fried rice or palaman sa pandesal.

Sweet and Sour Fish Fillet


For this you need:
half kilo cream dory (fillet)
half cup flour
1 egg
half cup water
oil for deep fying
For the sauce you need:
2 tsp brown sugar
half cup pineapple chunks, set aside the syrup
1/4 cup tomato sauce
1 bell pepper cut in squares
1 onion quartered
Now what you'll do;
cut the fillet in serving pieces. Dredge in flour and set aside. In a bowl, make a batter of flour, water, egg and salt.
In a pan, heat enough oil. Place the fish fillet in batter. Then throw it in in the hot oil. Cook until both sides are brown.
In a separate saucepan, dissolve sugar in pineapple syrup. Pour in 1/4 cup of tomato sauce. Simmer for a minute or two. Add in the onions, bell pepper and pineapple chunks. Simmer again for a minute. Turn off heat.
In a plate, arrange the fried fish fillet. Pour the sweet and sour sauce. Serve with rice.
Enjoy! Promise, this one is yummy :)
By the way, last year I posted another fish fillet recipe, it's a bit similiar but I skipped on the dredging part. :)

Spaghetti and Meatballs

My bowl of spaghetti
I love eating spaghetti from a bowl rather than a plate because this way I can easy twirl the pasta neatly against the inside of the bowl until no noodles are left dangling. No messy sauce splatting...hahahahha!!!!

Anyway, Im sharing this recipe that my husband and I loves. Especially when we're watching television :)

To make the meatballs;
Mix half kilo of ground beef plus chopped ham. Then add a dashed of salt and pepper. Sprinkled with a little flour. Mix mix well. Add 1 beaten egg.

Now this is the fun part. With the use of your hands, grab a small part of the mixture and form into balls. It’s up to you what size of the meatball you want. Deep fry in low heat so as not to burn the meatballs. When cooked, drain excess oil. Set aside.

Now for the spaghetti sauce, just the basic....
In a saucepan saute onions and garlic. I use one medium pouch of italian spaghetti sauce then I add 1 regular bottle of banana catsup. Salt and pepper to taste. Throw the sliced mushroom. Add the meatballs and simmer. Add the cooked pasta and mix well. Sprinkle grated cheese. Enjoy!

Cripsy Pata

Cripsy pata, hmmm sinful sinful pero cge na nga minsan lang naman ito.

To prepare this you'll need:
1 pork pata (preferably the front)
1 whole garlic (crushed)
1 whole onion (quartered)
peppercorns
some Salt

Here's how:
Clean and scrape the skin of the pata with a knife. Use a kitchen torch burn any remaining hair.

Place the pata in a casserole with water. Add the crushed garlic. onions, peppercorn, and salt. Set over high heat and let it boil. skimming off scum as it arises. Lower the heat and simmer again until meat is tender.

Remove the pata from the broth and drain well. I used my turbo and roast the pata. Set the turbo at 250 degree for 1-1/2 hrs or until the rind is golden brown.

Serve with steaming rice and ensaladang talong. Yummm.

Eggplant Ensalada

This is another easy recipe that I paired with the chicken insal. Just grilled the eggplant, peeled set aside (you can steam or boil it, your choice). Chopped onions and tomatoes. In a plate arrange the peeled eggplant, top it with the chopped onions and tomatoes then add shrimp paste. You could also used green mangoes instead of the eggpant if you like :D

Try also this, another version of ensaldang talong: You need:

4-5 pcs eggplants (boiled or grilled then peeled)
tomatoes chopped
onions chopped
crushed garlic
soy sauce (1/4 cup)
vinegar (1/8 cup)
sugar (1tsp)
chili peppers

Mix everything except the eggplant. In a separate bowl put the eggplant. Pour the dressing over the vegetable and toss. Let it stand for 30 minutes.

Fresh Lumpia

This was our brunch yesterday.

Crispy Liempo.

The liempo was thinly sliced and fried to crispy perfection.

Sinful yes but who cant resist this crunchy piece of meat. So for dinner, I wanted to make something healthy to eat. Therefore, I decided to make this.

Fresh Lumpia
For the filling;
1/2 cup onion, chopped
1 teaspoon minced garlic
1 boneless, skinless chicken breast half, thinly sliced
1/2 small carrot, finely julienned
2 cups sliced cabbage
2 green onions, finely julienned
2 teaspoons oyster sauce
1 teaspoon fish sauce
ground pepper to taste

It easy to do the lumpia filling. Just saute onion and garlic. Stir-fry for 30 seconds. Add the chicken, stir-fry. Remove from pan. Heat 1 tablespoon oil. Add carrots, then cabbage.Cook until vegetables are tender crisp, about 2 minutes. Return chicken mixture to pan; oyster sauce, fish sauce, and pepper; cook for 1 minute.

Cool filling mixture and spoon a tablespoon in lumpia wrapper. Repeat with remaining filling and wrappers.

For the wrapper, I usually use the wrapper bought at the supermarket but this time I like making the crepe type wrapper. I got the recipe here. :)

For the lumpia sauce, this is the recipe I usually use;

1/4 c. brown sugar
3 tbsp. cornstarch
1/4 c. soy sauce
2 tsp. ground garlic
1 1/4 water
Combine sugar and cornstarch in a saucepan. Stir in soy sauce and garlic. Add broth and mix well. Cook over medium heat until mixture thickens. Serve over Fresh Lumpia.

I considered making fresh lumpia as a labor of love (matrabaho kasi) but if husband wanted it, i shall make it. Thats love...mushy now. hahahaha!!!

Siomai Overload

The husband would always be excited for the weekends to come. Why? Because it's the only time I can cook something good for him.

So last weekend, I prepared pork siomai for our dinner. :)

You'll need:

half a kilo of ground pork
1 onion minced
bunch of spring onions chopped
a thumbsized ginger, peeled and grated
1 medium-sized carrot, peeled and grated
2 teaspoons of sesame oil
2 tablespoons of soy sauce
1 egg beaten
siomai wrapper
Then you have to;

dump everything in a bowl and mix. Take a teaspoonful of the mixture, fry in a little hot oil. Taste and make the necessary adjustments. Meanwhile, boil water and brush steamer with oil.

To make the siomai, take a tablespoon of mixture into each wrapper. Fold and seal. Steam in briskly boiling water for 30 to 40 minutes. Serve at once with a mixture of kalamansi juice and light soy sauce on the side.

Note: You can add half a cup of uncooked minced shrimp to the filling to make it more tastier but I am allergic to it so bye bye shrimp, hehehe!!!!

Pancit Canton

There are several ways to cook pancit canton. Here's my recipe and I wanted it to share with you.....

Here's how I do it....

You'll need
1/2k Dried Pancit Canton
1 pcs chicken breast boiled and flaked
1/4 chicken liver (fried in small amount of oil)
1 small cabbage
1 small carrots julienned
10 pcs green beans sliced diagonally
2 cups broth (or water)
1 garlic head chopped
1 onion chopped
oyster sauce
worstershire sauce
soysauce
salt & pepper

Then...

1. saute half the onion and half of the garlic, add the carrots. After a minute add the cabbage and green beans. (dont overcook)
2. Add the chicken and chicken liver. Sprinkle salt and pepper to taste. Set aside.
3. In a separate wok, drizzle some oil. Saute the remaining onion and garlic
4. Add the chicken broth, if it's not enough just add water. Make sure that the liquid is just enough for the noodles.
5. Season with soy sauce and pepper then bring to boil.
6. Cook in the dried noodles. Let the sauce be absorb by the noodles but make sure not to overcook it.
7. Add in the oyster sauce and worstershire sauce. Toss the noodles for a minute.
8. Add in the vegtable making sure that everything is mix. Turn of heat.
9. Place on a serving platter with sliced calamansi and chilis.

Enjoy!!!!

(you can add shrimp if you wanted, I just dont put it in my pancit kasi I'm allegic to it :) )

Humba

Humba Recipe (Braised Pork Belly) is one of the easiest dish I know and one of my favorite comfort foods.

TO make it, you'll just need:

1 lb. pork pork belly cut into serving pieces
1 cup water
garlic, crushed
1/3 cup vinegar
1/4 cup packed brown sugar
1/4 cup soy sauce
1 bay leaf
1 tsp. peppercorns
1tsp. oil
salt to taste
1 heaping tablespoon salted black beans

In a medium pot, saute garlic in oil until brown. Add pork and cook until brown. Combine water, soy sauce, vinegar, brown sugar, salt, bay leaf and black beans and add to pork. Cook over low heat until pork is tender. Serve hot.

Easy right?

If you wanted it to be a healthy meal, why not add tofu like what I did. :)

That's it Pancit!

This is how I cook my pancit. :)

You'll need;
1/2 kilo pancit bihon
pork slices, fried
chicken liver
chicken breast, boiled and shredded
Broth
Veggies such as;
baguio bean, carrots, chopped cabbage, soaked tengang daga
garlic, onions, soy sauce,
worcestershire sauce or oyster sauce or bell pepper * :)

Here's what I do
Soak the pancit bihon noodles to soften for 10 minutes.

Grease a large pan or wok with oil. Sauté onions and garlic. Add the sliced veggies (in this order carrots, baguio beans, cabbage and tengang daga). If you want a spicy taste add bell pepper. Stir fry then set aside.

In a separate wok, saute onions, add pork, shredded chicken breast, chicken liver. Add the broth. Drizzle some soysauce depending to your taste. Add 2 tbsp of worcestershire sauce or oyster sauce. Simmer.....simmer. (I dont use shrimp, Im allergic to it by the way)

Now...
Mix in the pancit bihon noodles cook for about 5 minutes or until the noodles are soft.

Add salt and more pepper to taste.

Top with the stir-fry veggies

Serve hot with sliced calamansi on the side.

* I suggest that if you'll use bell pepper omit the worcestershire sauce or the osyter sauce. So you can really taste the goodness of it's spicy flavor. And that goes too if you'll use worcestershire or osyter sauce :)

Pasta cooking made much easy

Angelhair Pasta with Tuna in Red Sauce

An easy and quick Pasta recipe. Glad there's this del monte tomato and cheese spag sauce. I love it's blend. It has the sour taste of tomato and the perfect flavor of cheese. :)

Okay enough said, del monte's not paying me here harhar!

So here’s what I did;

1.Cook pasta (500 grams) according to pack directions. Drain and set aside. I used angelhair pasta. It cooks in 3-4 minutes only.
2. In a pan saute onion then garlic, add the 2 cans of tuna (I used tuna in oil)drained and set aside.
3. Add a can of drained sliced mushroom (or olives)
4. Mix mix mix then set aside
5. In a saucepan, melt butter; add flour and cook on medium-low heat for 2 minutes, stirring constantly
6. Add the spaghetti sauce (I used delmonte tomato and cheese) and simmer
7. Then slide in the sauted tuna and mushroom.
8. Add chili pepper for some spice (optional)
9. Topped your cooked pasta with the red sapg sauce and sprinkle some grated cheese.
10.Done!

Easy Peasy right? :)

Sweet and Sour Fish

Where could that fish be? Did you see it? Actually the head and tail are showing lolz!

I know...I know, I loaded it with too much onions as in too much onions, tons of bell peppers and lots of carrots. tee-hee.

But it was still a favorite that day!

So how did I made this sweet and sour fish;

You need;

1/2 kilo of white fleshed fish (used tilapia)
tsp. of minced chopped garlic
1-1/2 to 2 c. of cooking oil
1 bell pepper
few pieces of julienned ginger
1/2 cup julienned carrots
1 onion, cut into eighths (here I used 2)
1 tomato chopped
1/2 cup ketchup
1/2 vinegar
1/2 cup water
sugar
tsp of cornstarch
salt

Then you have to;

Make cut 2 to 3 slits on the flesh of both sides of the fish and sprinkle salt all over and set aside for few minutes.
Combine ketchup, vinegar, sugar, water, 1 tsp salt, and cornstarch in a bowl, set aside.
Fry fish in high heat until goldern brown on both side. Remove from heat and drain excess oil.

In a saucepan, saute onion then garlic, add the ginger. Then add the tomato. Followed by the carrots and bell pepper. Mix everything. When the vegtables are cook (dont overcook) stir in the sweet and sour sauce and bring to boil. Simmer for a minute or until it thickens. Turn off heat.

Pour over fried fish and serve!

Instant

The other day, the husband and I were wandering around the supermarket when I saw this familiar photo printed on a piece of foil package. I look closely...then I saw the English character saying...Kimchi Ramen. Yay, it's my favorite, just perfect! It may not be the fresh one but this will do. :)

A hour later, us at home;
I cannot let go of the idea of enjoying the ramen....so I followed my heart! :)
I read the back label or should I say, followed the picture for instruction.

As I interpret the photo It says.... boil water for some minutes, pop the noodle and stir. Simmer. Remove from heat then add the seasoning. Mix mix mix. Place noodles into bowl . Grab a chopstick and enjoyed! See I can read korean instructions. :) Well...I put more water though! hahaha

It's good compared to some other instant noodles. :)
Then the next day, after the workshop, asked hubz to have a dinner near our place. There was this restaurant that I thought was japanese but was a korean restaurant...woooohhh!

Many Ways

French Toast anyone?

It's good with coffee or tea. A cup of chocolate or a glass of orange juice will make it heavenly. Top it with your favorite fruit and cream perfect.... or drizzle it with syrup....ah yummy!

Many ways indeed but for me the best would be eat it on it's own with hubby! Mushy lolz!!!!

If your appetite is saying....make me now, make me now, you'll just need to;

beat 1 egg mix with 3/4 cup milk, pinch of salt and drizzle with some cinnamon and a drop of vanilla

Then heat a lightly oiled skillet or griddle over medium heat.

Soak 2 slices of bread egg mixture for 20 second on each side, or until thoroughly coated. Cook bread until both sides are lightly browned and crisp.

Serve hot. :)

Comfort food

The other day, I was on a tv cartoon marathon with my ten year old niece. At around 3:00pm we felt hungry so I checked the fridge but there was nothing in there that interest my appetite. Then Kat (my niece) said she wanted to eat Lucky Me Pancit Canton.

Actually, it's been a long time that I haven't had instant pancit canton, for health reasons. But I must admit, I missed eating it.

So I asked Kat to buy 3 packs of instant pancit canton from the nearest grocery. After few minutes. We were enjoying this;

Pancit canton topped with poached egg. Ahhhh....It was good. :)

Food and Blessing

You need:
1/2k ground beef
2 cups elbow macaroni, cooked
chopped onions
chopped green bell pepper
1 can (8oz) tomato sauce
1 cup grated parmesan cheese mix with 1 cup mozarella cheese
1.4 teaspoon parsley
dash of pepper
3 cup milk
3 eggs beaten

What to do:

Preheat oven to 375 degrees.

In a skillet, cook ground meat, green pepper and onion over medium heat until meat is no longer pink; drain to remove excess fat. Add tomato sauce, milk, salt, pepper and parsley. Heat over medium heat for 5 minutes. Remove from heat add egg and blend well.

then

Place half the macaroni in a baking dish, pour half of the meat sauce then top with half part of the cheese. Place the remaining macaroni on top of it. Again, pour all the meat sauce and top again with the remaining cheese.
Bake for 30 minutes or until the cheese is bubbly.

I baked that for the first time. I wanted make something special last weekend to bring at my in-laws place because we have a new family member. My sister in law gave birth last January 6 to these two adorable twin girls....sasha and hanna. The most exciting was, the husband and I are gonna be their godparents. :)

Sorry I cannot tell which is which yet so lets call them the twins, hehehe They are so cute...

Pork Teriyaki

I got this simple recipe in a local magazine (yummy mag) last Saturday. I tried it this morning and it taste fab.

Here's the simple instruction.

Fry the thinly sliced pork and drain excess oil. Set aside.

Prepare the Teriyaki sauce. In a pot, mix 1/4 cup water, 1/4 cup mirin, 1/3 cup sugar. Let it boil. Add 1/3 cup dark soy sauce. Then add grated ginger. Simmer for a minute. Thicken sauce with 1-1/2 tbsp cornstarch dissoleve in 1 tbsp water. Pour on top of fried pork.

Yummmm...rice please!

Baked Chicken

We had this for dinner a while ago. although buying roasted or baked chicken is just as easy as 1,2,3, I opted to make my own. You see, those cooked chicken available commercially are usually salty or bland.

So to do this:

In a bowl, mix sugar, vinegar, rosemary and voo, blend well. Pour the marinade into a large resealable plastic bag; place the chicken in. Seal bag and and refrigerate chicken for a hour or two.

Now, before you bake the chicken, you have to preheat the oven for 350C

Okay..so drain the chicken. Before placing in a baking dish, rub it with the sugar, cayenne pepper, ground pepper & rosemary.

Bake for a hour and a half

You have to try this! Bon appetit!

Sweet and sour pork

  1. Sorry if I made you hungry hehehe!!!!!

    You'll need:

    half kilo slice Pork loin
    slightly beaten egg (I used 2)
    Flour
    Ground pepper
    Salt
    oil for frying

    For the sauce:

    Pineapple tidbits, reserved the syrup
    Tomato sauce
    brown sugar
    carrots
    onions quartered
    bell pepper
    water (about a cup)
    cornstarch dissolve in water

    How to:

    Sprinkle the flour with a little salt and pepper and mix well. Dredge the pork pieces in seasoned flour, then dip it in egg and fry, making both side brown. Remove from the pan and place on a plate with tissue to absorb excess oil.

    Now to make the sauce:

    Stir fry the onions, add the pineapple syrup. Stir in the brown sugar (if you find the syrup sweet, the sugar is optional). Then add the tomato sauce and water. I don't usually measure so to make it safe, put things in small amout then from there, add more depending on you taste. Simmer for a minute. Add the carrots and the pineapple tidbits (you can add bamboo shoots and green onions if you want). Let it simmer again. If it's bubbling add the cornstarch mixture to thicken the sauce. Then throw the pork pieces. Mix and serve. :)

    Easy peasy. It just like throwing everything there. lolz

    Hubby as usual loved it. He though it was chicken...hahaha!

Double Yolk Eggs


I found this odd eggs at the supermarket for 45php (half dozen). When hubz cooked it, I was a bit hesitant to eat it, was thinking that the oddity will somehow affect it's natural taste as like the Vitamin Enriched eggs we bought a month ago.



But when I tasted it, it wasn't bad after all, it tastes the same. I was thinking of buying this kind when making leche flan :)
