Whats in my Mind lately

Dj and I was out the whole day. He skipped work and decided to come with me at mandaluyong to do things that I was assigned by him to accomplish before I went back to the office on the 16th. This month long vacation is heaven for me. Imagine, I can spend more time with hubby, I can blog more, cook more and learn more dishes and I can make my self relax without any work to worry. But on the other hand, I miss work, miss my officemates, and believe it, I miss the pressure a bit.

My guy officemate who's working at Dubai for a month already texted me this morning. This person is a very dear friend. He spends 3 working years with the company. We really went along together as a working team and he was like a younger brother to me. I was there when he was crying about his break up with his girl but Im glad they we're back in each other's arm and happily married with a cute son. I know sometimes, he can be mean to some workmate but not to me, I'm his ate kasi. I'"m missing this brutal guy already.

Last Friday, since Dj and I don't have anything to do, we went to R's (my officemate) birthday party. Oh boy...the food was really yummy. I love C's kare kare. We took pictures (sorry can't post it I promise them kasi) and we sang. I tried singing my favorite songs from Nina, MYMP and Kitchie Nadal. Then another officemate commented, "na-miss ka namin, 2 weeks na lang ha at bumalik ka na." Hay...I have to admit na miss ko din sila but my decision is final na. I will be back to submit my resignation, work for a month (an office rule for leaving employees) then that's it I'll be officially out of the work force. There's no more turning back, my husband and I made plans and accomplished some of it already so definitely no one can stop me from leaving. Anyway, I don’t want the others to be sad so I changed the topic at once and besides I dont want to talked about it anymore. I was there to enjoy and be with my closest friends :D

As I've said, Dj and I were doing things in preparation for our little business and I thank God, that everything is falling into places though there are some teeny weeny problems that we have to fix. Thank goodness for his mom and my parents who are very supportive. It's too cool to have such parents as like them, right? :D

A dish with a help

A chinese dish that I loved and wanting to prepare is the Sweet and Sour Pork. I have compiled recipes for this and promised that will try making soon. Then, I saw in a magazine that Mang Tomas (yes the ever famous liver sauce) is not only for lechon now but in some home cooking as well. They offer teriyaki, barbeque, chili and the sweet and sour sauce.
And so...I got a bottle of the sweet and sour sauce in one of our grocery trip. I tried making the dish for the first time for dinner this evening. The cooking instructions were written at the back of the bottle and it was easy as 1,2,3. But it requires fish. So I replaced the fish with pork and add some little ingredients to it.

All you'll need are...
half kilo pork ( I used kasim) cut into 1-1/2" x 1-1/2"
Half cup red bell pepper
Half cup green bell pepper
Carrots cut into cubes
small can of pineapple chunk, drained and syrup set aside
1 onion chopped
a cup of evaporated milk
one beaten egg
A bottle of Mang Tomas Sweet and Sour Sauce. You'll need more than half of the bottle
A cup of flour
I dont have a stock of this. I only have the Japanese breadcrumbs, which is used for tempura. Since the jap bread crumbs are grainy, I powderized it a bit with our grinder. Voila I got this.

Then I just mix the milk and beaten egg in a bowl. Soak the pork in the milk and egg mixture. Set aside for 15 minutes. While waiting, mix the flour (in my case the jap bread crumbs). Drizzle some salt and pepper. Then after 15 minutes, coat the pork pieces with the flour mix then deep fry until golden brown then transfer in a platter.

For the sauce, this is very very easy...stir-fry the diced bell pepper, the green and the red (well I only have the red bell pepper). Then add the chopped onions, pineapple, carrots. Then pour the Mang Tomas Sauce. Add the pineapple syrup. Simmer a bit. Then Slide in the fried pork pieces. Mix until all the meat is cover with the sauce. Then it's done. Easy isn't it and it's yummy too. I tasted it, can't wait for dinner :D

A Short Note

It's 2:00am and still Im in front of the PC finishing some stuff that I'll be needing this morning at DTI. In an hour and a half hubby will wake up, get himself ready for work and leaves our place at 4:00am.

Since I know, I can't wake up that early, So I wrote this note for him. Hoping that though I cannot make myself wake up at 4:00am, I want him to have my 143 words before he leaves our place and not to forget the take care always which I always say to him.

Oh boy am I sleepy...I better hit the bed now. Goodnight.

A visit to Dexie' place makes me drool over her fried tilapia which is my ever favorite. So, I prepared it for lunch. I accompanied it with ensaladang talong, a combination of steamed talong, sliced tomatoes, chopped onions and barrio fiesta spicy bagoong. kakatakam di ba!!!

You can use green mangoes in replace of the talong (so it's an ensaladang manga na, he he he)

Im in my 2nd day of leave from work. So what's been keeping me busy around here. Been cleaning some mess aside from that Im a little busy with reading, finishing the books that I haven't done in ages.

These are the books that have been seating in my shelf and needs some dusting. I haven't tried opening any of them for a long time. Since I have more time (28 days more), guess I'll keep myself busy in reading while sipping my freshly brewed coffee.

Easy Does it

I was at the grocery the other day, while I was pushing my cart, I spotted the pre-marinated teriyaki pork strips of Monterey at the meat section. Since I was running out of ideas for dinner, I opted to buy a half-kilo of it. When the butcher handed me the package of the item I bought, I then realize, I haven't tried cooking pork teriyaki yet. I know its an easy recipe but I don't know how to start. Hmmm...

While I was in the middle of thinking on how to prepare pork teriyaki, I saw this.

Kikkoman teriyaki marinade & sauce with roasted garlic

At first I was hesitant to buy it. I was worried if the teriyaki sauce with roasted garlic will goes well with the pre-marinated pork that I bought. Since this kikkoman sauce is something new to me, so im not sure of it. I thought I should have spotted this bottle first and bought a fresh pork instead and use the sauce as it's marinate. Oh well, I have to trust my taste buds (and the kikkoman brandname of course).

At home, I tried tasting the sauce. It was yummy and the flavor of the roasted garlic made it much tasty. I guess I made a right decision anyway. I then prepared all the ingredients and started hitting the stove.

So what I did here...

Drizzle some oil in the pan, just enough to make the pan greasy. Then slide the marinated pork strips. Stir fry until the pork is tender. No need to saute garlic since Im using a flavored garlic sauce. Then pour in the teriyaki sauce. Just enough to cover the meat. I was about to add sugar to sweetend it a bit then I remember that I have a can of pineapple chunk so I opened it, and pour the syrup first. Simmer for say 3 minutes. Then add the chunk pineapple. Then mix. Add a dash of pepper. Then voila an easy pork teriyaki.

Hope for the best

If you have been wondering what did happen with my resignation. My boss and I had this talked the very same day I tendered my resignation. He asked me why. There were no signs that I'm planning to resign as he mentioned. He even asked if I were going somewhere else or will I work abroad. I told him that Im not going anywhere. I'll just stay home and have this little business that H and I had been planning since last year. Aside from that I do wanted to take a break from the longest time I've been working. After hearing my side, boss suggested that I should take a 1-month vacation leave. He said that, I am just stress-out from work and do need a break. And he even mentioned that not all resigning employees are given such option. He just let them go and leave the office. Still I insisted my resignation. So he read again my letter and insisted more the vacation leave. He then wrote "leave for 1 month" on the paper and said, " sige na, mag leave ka muna, then after a month pag ayaw mo na talaga, hindi na kita pipigilan." I felt that I was that important in this office.

So after our talk, I agreed and wrote a request for a month vacation and boss signed for approval. Then people from other departments were asking if it's true that Im leaving and some even asked why. It was funny because, they suggested the same thing as what boss has in mind. Then a co-department of mine suggested this " Jen, wag ka na muna resign. Please." My heart was touched. It's hard when you really spend most of your time at work, you'll surely miss the people and the environment when it's time to leave and move on. But again Im positive about this. If ever my mind wont change after the vacation leave (at this time, I know I wont) I'll go with my resignation. After all, it's the work that Im leaving and not the friends I made.

So now, Im counting the days, 13 more and I'll be on leave. Im excited.
